Did you know you can freeze your overripe bananas whole? As soon as they get a bit too soft (and this hot weather has been turning them quickly!) then I just throw them whole into the freezer, skin and all. When defrosted, they will be very squishy but I guarantee they'll make the best banana cake that you've ever tasted! And you'll never waste another banana again. You can also use them in banana muffins, banana and honey loaf or banana fritters.
