One thing I always like to have on hand is roasted garlic. I just can’t get enough of it. I add it to my home made hummus and salad dressings and mashed potatoes.
Remove from oven and cool. Squeeze cloves from their casings and mash garlic in a small bowl. Freeze in small quantities in an ice cube tray or in clip seal bags.
Use in aioli, hummus, or on top of pizza bases. You can even just spread on top of bread or crackers as the garlic will be soft and slightly sweet. Add to mashed potatoes. In fact, just add roasted garlic to everything!
