Our most favoured fritters are corn (often because all that is left with the flour, eggs and cheese is a packet of frozen corn kernels in the freezer, or we are lucky enough to have roadside stalls with cheap fresh corn!). We’ve come up with a few different variations over the years though. These have been a lifesaver in floods too when we couldn’t get out to get supplies. The boys love them drizzled with sweet chilli sauce and the girl just likes her straight out of the pan.
Fritters are also great for the lunchboxes (if there’s ever any leftover).
