Thick pumpkin soup
I could live on pumpkin soup. I make mine with Kent or Jap pumpkin. Butternut Pumpkin will give a completely different flavour so use whichever pumpkin best suits your personal tastes.
My kids were never big fans of pumpkin soup, so I would make a double batch and then freeze in individual serves in clip seal bags. I'm not a big red meat eater so when I'd make a beef soup for everyone else, I would get out the single serves of pumpkin soup for me.
Serve with thick slices of homemade bread from the breadmaker with lashings of real butter. Yum!

I love Sundays.  A lazy lie-in and then a delicious brunch with family. This bacon spinach and cheese omelette is best enjoyed al fresco with a fresh pot of tea or coffee and some crusty, buttery bread. Take your time. Ease into the day.
Omelette also makes a light and easy dinner that is still packed with nutritional goodness. Serve with a side salad and a slice of garlic bread for a complete meal.

Cheat's lamingtons made with butter cake
​Confession: I cannot make a sponge cake.
I'm a great cook, but the sponge cake has beaten me every time.
Fact: I love lamingtons. Probably a little too much, but I was tired of waiting for the annual fundraising lamington drive to get my fill and I refuse to buy lamingtons in packets from the supermarket - they are filled with preservatives!
So I found a way to cheat! I use my butter cake recipe as the base and then dip them in plenty of glace icing and roll in coconut. Serve at room temperature and they are as good as any sponge lamington I have ever tasted.

Mini Quiches
​Oh tasty little morsels of goodness. Crisp and golden and flaky pastry with a light and fluffy and tasty egg filling. This is magic in a tiny little edible parcel. 
Mini quiches make great finger food for entertaining or for weekends with the kids. Everyone will love them. The leftovers are also great for lunchbox fillers.
There are 3 varieties of mini quiches included here but the possibilities really are endless. Use the basic recipe at the end to mix and match and create your own combinations.
​These are easy enough for the kids to make too! Get them baking!

Sticky Date Pudding with Homemade Butterscotch Sauce

​​This is one of my personal favourites. The sweet, sticky butterscotch sauce is incredible (and I have been known to have the sauce on pancakes too!) Delicious. 
Sticky date pudding is absolutely divine served with fresh cream, ice cream or custard and has been requested many a time in lieu of a birthday cake.

Beef and Vegetable Soup
​Winter's here!
​My friends down south always laugh when I say I'm cold and I must admit, our days are still glorious here but our nights do get chilly! There are always lots of lurgies hanging around at this time of year so this rich and hearty beef and vegetable soup will help to ward off the nasty bugs that are hanging about. 

Serve with thick slices of homemade breadmaker bread or crusty rolls and lashings of real buttter. Unbeatable.
I usually double this recipe as the boys will have at least two bowls (but usually three or four!)

Chicken Stir Fry Slaw


I had no idea what to call this other than yum. It's basically coleslaw ingredients (cabbage and carrot and spring onions) stir-fried with chicken mince and a sweet chilli stir fry sauce so I decided to call it chicken stir fry slaw.. Anyway, whatever it is,  it's super easy to throw together (one pan) and it's mega delish!

Yum.
I love the stuff but it's one of the things that I actually don't want to make from scratch! Not when I can buy a good quality mayonnaise (avoid the cheap stuff) and throw in some roasted garlic and a splash of lemon juice and I'm done.
I always have some roasted garlic on the go, or in the fridge or freezer and so can  make aioli on tap as needed. Seriously so good with my home made potato wedges or dolloped onto garlic smashed potatoes.

Homemade Caramelised onions - superb!
I love caramelised onions. Like, crazy love. Their rich sweet/savoury combination is really something else. And they are so much better homemade. I will make a large batch of caramelised onions and kind of overdose on them every once in a while. 
Caramelised onion and feta quiche is my all-time favourite, Caramelised onion and feta pizza is also fantastic, and I use them on burgers, or in Bolognese or you can just top a steak with them. I also simply love them on a platter with crackers and cheese. ​

    I have  an unpublished cookbook manuscript that lives on my kitchen bench. This is the collection that I have fed my family from for many years, all made from a core list of practical and economical ingredients. The manuscript is splattered with butter, flour and milk from daily use. It moves between the kitchen and the office as I edit and test-kitchen the recipes.
