4 large granny smith apples
1/2 cup (firmly packed) brown sugar
2 tablespoons golden syrup
Juice of 1 lemon
¾ cup self raising flour
½ cup desiccated coconut
½ cup rolled oats
100g melted butter
Directions to Cook:
Preheat oven to 180°C.
Peel, core and slice apples.
Mix golden syrup, 2 tablespoons lemon juice and 1 tablespoon of the brown sugar in a medium saucepan. Add sliced apples and stir to coat. Cook over low heat, stirring occasionally, until apples soften.
Brush a 6 cup capacity ovenproof dish (22cm round x 7cm deep) with a little of the melted butter and spoon apples into dish. Pour over any remaining pan juices.
In a medium mixing bowl, combine flour, coconut, rolled oats and remaining brown sugar. Pour butter into a well in the centre of the dry ingredients and mix to form a crumble. Sprinkle mixture evenly over apples.
Bake for 25-30 minutes or until top is crisp and brown.
Serve with freshly whipped cream or ice cream.
Apple and Mango Crumble
Use 3 apples and 400g tin mango slices, well drained. Follow instructions as per recipe above, spooning mango slices in with cooked apple mixture.
