Directions to Cook:
Preheat oven to 180°C.
Peel, core and slice apples.
Mix golden syrup, 2 tablespoons lemon juice and 1 tablespoon brown sugar in a medium saucepan. Add sliced apples and stir to coat. Cook over low heat, stirring occasionally, until apples soften.
Brush a 6 cup capacity ovenproof dish (22cm round x 7cm deep) with a little of the melted butter and spoon apples into dish. Pour over any remaining liquid.
In a medium mixing bowl, combine flour, coconut, rolled oats and ½ cup brown sugar. Pour butter into a well in the centre of the dry ingredients and mix to form a crumble. Sprinkle mixture evenly over apples.
Bake for 25-30 minutes or until top is crisp and brown.
Serve with freshly whipped cream or ice cream.
Apple and Mango Crumble
Use 3 apples and 400g tin mango slices, well drained (or 1 fresh mango). Follow instructions as per recipe above, spooning mango slices in with cooked apple mixture.

I have an unpublished cookbook manuscript that lives on my kitchen bench. This is the collection that I have fed my family from for many years, all made from a core list of practical and economical ingredients. The manuscript is splattered with butter, flour and milk from daily use. It moves between the kitchen and the office as I edit and test-kitchen the recipes.
