Tuna Pumpkin and Rice Patties


These little morsels are packed with so much deliciousness (as well as nutritional goodness)! Crunchy and golden on the outside and tender on the inside. CHeap and cheerful eats!
Tuna Pumpkin and Rice Patties are delicious served with sweet chilli sauce and a side salad. 
Great for filling up teenage boys. Add extra carbs with some crunchy potatoes and garlic bread.

Tuna Patties
​As summer approaches the meals get lighter and tuna patties are the perfect accompaniment to a fresh garden salad. I'm a big fan of patties of all sorts and I regularly make vegetable patties, beef patties, chicken patties or chick pea patties to serve alongside a selection of great salads. I will be uploading plenty of salad recipes soon as the weather in the Southern Hemisphere is warming up and it's time for alfresco dining. This is my favourite time of the year as we linger longer out on the back deck, talking well into the late sunset before meandering inside to finish our various tasks. Summer is such a time of togetherness and good food is central to those memories.

Tuna, Chicken or Vegetable Mornay

Tuna Mornay
​Mornay is a regular in our house for two reasons. Firstly, I have teenage sons. These guys are like human vacuums, ingesting voluminous amounts of food several times a day. Lots of pasta is good. It at least touches the sides. 
Secondly, it is economical. And economical is good. Pasta is cheap and goes a long way. I use powdered milk for the recipe to stretch that grocery dollar just a bit further. And it makes the perfect leftovers for lunch, except there's usually none left over in our house.

    I have  an unpublished cookbook manuscript that lives on my kitchen bench. This is the collection that I have fed my family from for many years, all made from a core list of practical and economical ingredients. The manuscript is splattered with butter, flour and milk from daily use. It moves between the kitchen and the office as I edit and test-kitchen the recipes.
