2 cups self raising flour
2/3 cup caster sugar
3 tablespoons (60g) melted butter
¾ cup milk
¾ cup choc bits
Directions to Cook:
Preheat oven to 180°C.
Combine sifted flour and sugar in a large mixing bowl. Juice orange and grate rind.
Whisk together milk, butter and egg in a small jug with ½ cup orange juice and fold into dry ingredients. Fold through grated orange rind. Do not overmix. Gently fold through sultanas. Place heaped tablespoonfuls of mixture into greased muffin trays and bake for 15-20 minutes until golden and crunchy on top.
Stand in tray for 5 minutes before transferring to a wire rack to cool.
Omit choc-chips and substitute with ¾ cup sultanas.
Gluten Free Variation:
Substitute *Orgran Gluten Free Self Raising Flour directly. After mixing, allow mixture to stand 5-10 minutes to thicken before putting heaped tablespoonfuls into greased muffin tray holes.
