1 kg beef mince
1 tablespoon olive oil
1 tablespoon butter
2-3 cloves crushed garlic
2 medium peeled carrots
1 small red capsicum
1 stalk celery
1 medium brown onion
2x 400g tins diced tomatoes
1 cup beef stock
2 tablespoons tomato paste
1 tablespoon brown sugar
Juice of ½ lemon
Pinch of salt
Dash of pepper
2 bay leaves
Pinch mixed herbs
4 tablespoons butter
4 tablespoons plain flour
4 cups milk (1 litre)
1 ½ cups grated cheddar cheese
Packet of Instant Lasagne sheets (large pack)
¾ cup grated cheddar cheese
¼ cup grated parmesan cheese
Directions to Cook:
Preheat your oven to 180°C.
Start by making the meat sauce, and while it is simmering, make your Bechamel Sauce
Finely dice onion, carrots and capsicum. Thinly slice celery.
Heat oil in a large saucepan. Brown mince, breaking up the lumps with a wooden spoon. Remove mince from pan and drain excess fat.
Melt butter in pan and sauté onion, garlic, carrot, capsicum and celery until tender.
Return mince to pan and stir through tomatoes, beef stock, tomato paste, lemon juice, sugar, herbs and bay leaves. Season with salt and pepper.
Reduce heat and simmer for 20-25 minutes or until sauce thickens slightly.
Remove bay leaves.
Melt butter in saucepan over low heat. Add flour and mix well to combine. Stir over low heat for 1 minute.
Remove pan from heat. Gradually add milk, whisking in between each addition until smooth.
Increase heat and return pan to stove. Stir continuously until sauce boils and thickens.
Stir through grated cheese until melted.
Grease a deep sided baking dish and cover the base with half of the meat sauce.
Lay instant lasagne sheets over the meat or vegetable sauce and spoon half of the béchamel sauce over sheets. Repeat with remaining meatsauce, lasagne sheets and béchamel sauce. Sprinkle top with combined grated cheeses.
Bake for 30 – 40 minutes until golden brown and bubbling and pasta is tender.
Stand 5 minutes before serving.
