Directions to Cook:
Rinse uncooked rice and drain well.
Dice onion and capsicums.
Heat olive oil in a large heavy based pan. Sauté onion and garlic until tender. Add capsicum. Sauté further 5 minutes. Add cumin and paprika, cook 1 minute until aromatic. Add rice and cook further 1 minute. Add chicken stock, diced tomatoes and tomato paste and bring to the boil over high heat. Cover and reduce heat. Simmer for 20-25 minutes or until rice is tender and liquid is absorbed. Remove from heat and stand for 10 minutes. Stir through parsley. Serve.
500g chicken thigh or breast fillets.
Dice chicken into 1-2 cm cubes. Add chicken to pan after sautéing onions, garlic and capsicum. Cook 5 minutes and follow remaining instructions above.
Brown 500g sausage and slice into 2cm pieces. Stir through with parsley.
