4 tablespoons caster sugar
1 cup self-raising flour
¾ cup milk
¼ teaspoon bi-carb soda
1 tablespoon melted butter
Directions to Cook:
Dissolve bicarbonate of soda with milk in a small jug.
Beat egg and sugar together until sugar is dissolved. Add sifted flour alternatively with milk. Add melted butter and mix thoroughly.
Heat pan over low-medium heat and spray with oil. Drop tablespoonfuls of mixture into pan. Turn when bubbles appear on uncooked sides. Brown both sides and lift out of pan. Repeat with remaining mixture and cool pikelets on a wire rack.
Serve with jam and whipped cream or butter and honey/syrup.
Gluten Free Variation:
Substitute *Orgran Gluten Free Self Raising Flour directly.
