I browned the mince with some onion, added the pasta sauce and then added the tin of cream corn and Voila! This is now my go-to mix and has been the favourite of all the neighborhood kids over the years after the news travelled like wildfire that I made the best nachos in town. The recipe works equally well with chicken mince.
500g pork mince
1 medium brown onion
1 tablespoon olive oil
1 ½ cups tomato pasta sauce
425 tin creamed corn
Pinch of salt
Dash of pepper
Peel and finely dice onion. Heat oil in a large frypan and sauté onion until tender. Add mince and brown. Add pasta sauce and creamed corn and mix thoroughly. Season with salt and pepper. Bring to the boil. Reduce heat to low-medium and simmer for around 25-30 minutes or until sauce reduces and thickens.
Top corn chips with grated cheese and melt in microwave or oven, layer with pork mince sauce, sour cream, Guacamole and top with finely chopped lettuce, tomatoes, cucumber and grated carrot.
*Substitute 500g chicken mince directly

The manuscript is splattered with butter, flour and milk from daily use. It moves between the kitchen and the office as I edit and test-kitchen the recipes.
