Tomato Pasta Sauce
1 tablespoon olive oil
2 onions, chopped
4 cloves garlic, crushed
8-10 large red tomatoes, peeled, seeded and chopped OR 2 tins diced tomatoes
2 tablespoons tomato paste
Fresh or dried herbs
Salt and Pepper
Heat oil in a frying pan over medium heat. Sauté onion and garlic until just tender. Add tomatoes. Bring to the boil. Reduce heat. Stir through tomato paste and herbs. Season with salt and pepper. Simmer for 15 minutes, stirring occasionally, until sauce thickens.
Makes 4 cups.
· Add extra chopped vegetables after sautéing onion and garlic. For example: chopped red capsicum or celery, grated zucchini or carrot, etc. Then add tomatoesnand tomato paste and simmer. Great way to use up garden veggies. I used to cook it all up in a sauce and then puree. I would then brown up some mince and add this sauce and simmer and use for a Bolognese sauce for the boys. A big veggie hit, disguised!
Life for us has been all about survival on a shoestring budget. I've learnt how to live on very basic (and cheap) staples and I cook from scratch and don't buy prepackaged mixes of anything. I've raised three happy and healthy kids and I believe that food is central to good communication and a happy and connected life!
I have an unpublished cookbook manuscript that lives on my kitchen bench. This is the collection that I have fed my family from for many years, all made from a core list of practical and economical ingredients. The manuscript is splattered with butter, flour and milk from daily use. It moves between the kitchen and the office as I edit and test-kitchen the recipes.
